Healthy Banana Muffins with Blueberries

You guys this healthy blueberry muffin recipe is so good. Nearly all sugar has been eliminated and they are still so good. They are moist, which can be tough to achieve in healthy banana muffins. In fact, I make enough to make sure I can eat them for breakfast as well!
Any healthy muffin is a must have in your stash of healthy toddler recipes. Of all of our muffin recipes, Felix tends to like blueberry muffins the best. This is also a food babies love. I remember how easy it was to give these to him when he was about 8-9 months old, and chopping them so he could eat them as a finger food and practice his pincer grasp.
I make this one with greek yogurt because I want to maximize his sources of vegetarian protien. If you want you can also make this a vegan recipe by switching out the yogurt for natural applesauce, which adds some fiber. Be sure to use applesauce made 100% from apples- some brands use pectin which can constipate babies and toddlers.
RECIPE: Healthy Blueberry Muffins
1 large egg
3 very ripe bananas
1.5 TB maple syrup (can sub honey)
1/2 C greek yogurt
1 tsp vanilla
3 TB oil (avocado is preferred but I use grapeseed or coconut as well)
1/2 tsp baking powder
1 tsp baking soda
1 1/3 C spelt flour (can be sub whole wheat flour)
-Preheat oven to 375 f
-Grease muffin sheet - I use soft butter and a cloth to wipe it around each tin.
-Beat Egg in Bowl and add bananas. Mash all together until bananas are relatively smooth (read: smooth enough)
-Add the rest of the wet ingredients and combine
-Add baking soda and baking powder and combine.
-Scoop batter into muffin tin and cook for 23 minutes. Check with a toothpick to make sure it comes out clean.
Enjoy your almost zero added sugar very healthy banana muffins!
